  • Two tsp olive oil

  • Six tablespoons of unsalted butter, divided among four (1 1/2 pounds) chicken cutlets

  • One tsp kosher salt plus enough to taste

  • half a teaspoon of finely powdered black pepper

  • four huge cloves of minced garlic

  • 1/4 cup of freshly packed, coarsely chopped parsley leaves and delicate stems

  • 1/4 cup of Parmesan cheese, finely grated

  • 1 lemon, sliced into wedges (not required)

Method

Prepare the chicken:

Heat the oil and two tablespoons of butter in a big skillet over medium-high heat.
