Bites of Crab and Shrimp

INGREDIENTS in Bites of Crab and Shrimp

  • Mustard Sauce
  • 1 ¼ cup mayonnaise
  • 2 Tbsp lemon juice
  • ½ tsp Worcestershire sauce
  • ¼ cup Bread & Butter pickles, chopped plus
  • 2 Tbsp pickle juice
  • Chop 1 green onion,
  • 2 tablespoons parsley,
  • 2 tablespoons fresh dill

Bites of Crab and Shrimp

  • two yolks from eggs Heavy
  • whipping cream, 1/3 cup
  • 3 white bread pieces (crust removed)
  • ¼ cup plus 1 tablespoon mayonnaise
  • One teaspoon of Dijon mustard
  • One tablespoon of lemon juice
  • 2 finely chopped shallots
  • 2Tbsp finely chopped garlic
  • One-third cup panko breadcrumbs
  • One pound of well-drained, pasteurized Aqua Star Blue Swimming Crab Lump Meat (any grade will do if the lump is not available)
  • One pound of cooked shrimp (peeled and tails removed)
  • two teaspoons of Cajun spice

TO MAKE

to make the tarter sauce put all the sauce ingredients in a medium bowl and mix until smooth until you’re ready to serve keep cold.

In a large mixing bowl. mash the white bread with heavy whipping cream. and egg yolks with a wooden spoon to create a creamy paste. Add the Dijon mustard shallots garlic lemon juice and 1/4 cup panko pieces. Be careful not to split up the crab meat as you gently fold in the shrimp. Add extra panko breadcrumbs to the mixture if it seems too loose.

Mix one cup of panko breadcrumbs and the Cajun spice in a medium-sized bowl.

Cut the crab and shrimp mixture into pieces the size of golf balls using a small ice cream spoon. place balls on a baking sheet and let the sit for 15 minutes after making sure they have been completely covered in dust.

Turn the oven on to 400°F. Bake the crab and shrimp bites for 6 to 8 minutes, or until the coating turns golden brown. Enjoy it with the tartar sauce on the side!

Serving Ideas

You can prepare the crab and shrimp pieces a day in advance ( before coating them with toasted bread) and keep them in the freezer closed.
