Waldorf Salad
Famous for its delicious blend of crunchy apples, celery, and almonds covered in a creamy and tangy dressing, Waldorf salad is a traditional American salad. This classic dish, which dates back to the late 19th century, is a refreshing addition to any American meal. This salad, which was first developed at the Waldorf-Astoria Hotel in New York City, has endured as a representation of refinement and elegance despite its reputation for being incredibly tasty and straightforward.
One of the most famous hotels in New York City at the time, the Waldorf-Astoria Hotel, served the Waldorf Salad for the first time in the 1890s. There were only three components in the original recipe: apples, celery, and mayonnaise. The salad became popular right away with the hotel’s exclusive clientele and became well-known quickly.
The recipe changed over time and was updated to include extras like grapes and almonds. Serving the Waldorf salad as an appetizer or side dish at formal dinners and special occasions, it became a mainstay in American restaurants and homes.
COMPOSITION:
Regarding the Salad:
- One-quart of finely chopped apples
- Two cups of celery, chopped
- Almonds, blanched and shredded, 1 1/2 cups
- Three-quarters cup of rolled pecan meats
Regarding the Dressing:
- a melted tablespoon of Crisco
- one tsp mustard
- One tsp white sugar
- half a teaspoon of salt
- One-fourth teaspoon pepper
- 2 yolks of well-beaten eggs
- four tsp lemon juice
DIRECTIONS:
Preparing the Ingredients:
Chop the apples, cube the celery, blanch and shred the almonds, and roll the pecan nut meats in a big mixing bowl. In order to spread the ingredients evenly, toss them together.
Making the Dressing:
Meanwhile, make the dressing in a different basin. One tablespoon of Crisco should be melted first, followed by one teaspoon of mustard, one teaspoon of white sugar, half a teaspoon of salt, and one-fourth teaspoon of pepper. Thoroughly combine these ingredients. Add the 4 tablespoons of lemon juice to the dressing mixture and whisk slowly. This produces a delicious and tangy dressing base.
Thickening and Cooling the Dressing:
The dressing mixture should be cooked in a double boiler until it thickens. A few minutes should pass throughout this. Add the two well-beaten egg yolks to the thickened dressing and simmer until the desired consistency is achieved. Let the dressing cool down before gently incorporating the beaten egg whites until they are well mixed.
Assembling the Salad:
Mix the prepared dressing into the salad mixture right before serving. Mix everything until the salad is thoroughly coated. At this point, if you’re making the traditional version, mix in 1 cup of whipped cream. In the event that whipping cream isn’t available, use the dressing specified in the ingredients.
