  • 1½ cups Japanese soy sauce, as Kikkoman, or ganjang, or Korean soy sauce
  • Half a cup of ketchup
  • One-half cup of rice vinegar
  • A quarter cup of dense brown sugar
  • ¼ cup thinly sliced onions
  • Sesame oil from Asia, two tablespoons
  • Two teaspoons of optional gochujang, a Korean red pepper paste or sauce
  • One tablespoon of finely chopped fresh ginger
  • 3 minced garlic cloves

DIRECTIONS to make Korean BBQ Sauce:

Mixing the Ingredients: Put all the ingredients in a saucepan and heat them to a medium temperature. Let the mixture to simmer for a while.
Simmer and Reduce: Lower the heat to medium-low after the mixture has reached a simmer. Simmer the sauce until it has reduced by about one-third, stirring from time to time. It should take fifteen to twenty minutes to complete this.

Baste and Serve: If you’d like, you may use a small amount of the warm sauce to baste your cooked or grilled food during the last few minutes of cooking. You can serve the leftover sauce at the table so that guests can dip or drizzle it over their food.
Storage: For at least two weeks, any remaining sauce should be kept in the refrigerator in a sealed container. Reheat the sauce before serving. if required.
